PASTA SALAD CAPRESE

Ingredients
  • 2 ø cups dry pasta

  • ¾ cup balls of fresh mozzarella or fresh mozzarella cheese in squares

  • 1 cup cherry tomato, cut in half

  • 3 tablespoons chopped fresh basil

  • 3 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons pasta cooking water

  • Salt and pepper to taste

Preparation
  1. Cook the pasta in salted boiling water until it is al dente (soft but still slightly firm when you bite it) - check the package of your pasta as the time varies of pasta and the size of it.

  2. While cooking the pasta mix in a bowl the olive oil, balsamic vinegar, 2 tablespoons of the pasta cooking water, salt and pepper to taste.

  3. Strain the pasta and add hot to the oil mixture and mix well. If you want it cold and eat it instantly, then cool the pasta with water, strain and add to the bowl to mix with the dressing.

  4. Here are two options, you can add the missing ingredients and serve at the moment, or let rest a little (about 5 minutes) so the pasta absorbs more flavors of the dressing. Add tomato, mozzarella and basil, mix well and ready. Enjoy hot, warm or cold.
